catching up

To help kick off the summer, I’ll share a cool, refreshing fruit salad for your warm weather menu. It’s super easy, so I’ve been making it a lot. It was given to me by Karen.



1 box dry orange jello
1 carton cool whip
1 carton cottage cheese
1 can mandarin oranges, drained
1/2 can well drained crushed pineapple


Add jello to cool whip, beat.
Add cottage cheese.
Add fruit.

I’ve had a wonderful spring! I was given the awesome opportunity to travel with Mom, Anjelia, my two Aunties and Uncle Gil to the Sweet South!!!!! The trip was a gift from God. I really, really needed a break away and I was blessed! It was the perfect vacation spent sitting around my Aunt and Uncle’s kitchen table – all day, everyday – eating and visiting with all the family coming and going.  I came back feeling like a new wife and mom. I just wish I hadn’t come back bigger!

Traveling 12 hours with a four-year-old in a van with five adults can seem a little intimidating to a mom, but Anjelia was a perfect angel the entire week. I am not even exaggerating. I loved the chance to spend one on one time with my baby.

During my visit I was able to watch my cousin Debbie’s boy, Christian, cross over into the Boy Scouts. I was AMAZED to watch this very special ceremony. I wish our culture put more emphasis on rites of passage for young men. They need this kind of character building.

Christian’s dad, Steve, was his Cub Scout leader.


Our spring evenings have been filled with softball and t-ball games. Elaina started playing t-ball this year. I have to say it’s the cutest thing I think I’ve ever seen! I’m putting Anjelia in next year. It’s just so fun to watch!

    Angelia was a perfect little girl on our trip. Now I know what pics you were taking when we could not find you. That was a cool stop at the state line.

  5. Actually, those were from Mom’s camera since mine was not working. I do have a battery that cooperates with my camera on occasion, so I was able to take the t-ball pics.

  6. Cute outfits! I had to play on the boys team when I was little. :) Is that the same salad that Aunt Linda makes at Thanksgiving?

  7. It’s not the same. I would really like to have Aunt Linda’s recipe. It sounds so good. She said she uses tapioca pudding in hers. Yum!

    Anjelia, was an angel on that trip, coming and going. So glad you 2 got to go with us. Am sure Mom (Vera) enjoyed it too. The salad was delicious and went well with the KFC and as a snack too. The pink team of girls is precious. Bet you were beaming from the bleachers.

    I’m just glad you spoke up. Your welcome anytime as is anyone else wanting to go South. (As long as I know them). It also makes the time go faster.

    Cute pictures, Jules! I’ve noticed at the different ball games that the girls always have their team colors made up into barrettes or ribbons–cute. Guys just don’t do that—and I’m glad actually. Just wouldn’t be the same, huh?! ha

  14. The t-ball boys look so darn cute in their uniforms, too. But you are right, they are polar opposites. It’s a good thing!!!

  15. Love the pictures and the recipe, it’s a little like Linda’s recipe but with a twist. We did enjoy you all so much.Too bad it wasn’t hot enough for the pool. Al got a grill for Father’s Day, we’re gonna try it out for the 4th.
    Our summer will be fun with Tristen coming!
